Cauliflower (Gobhi) – Indian Recipe

Ingredients:

1 cauliflower: cut into small flowerets
1 cup : Bengal gram flour
1/2 cup : all purpose flour (maida)
1 tsp. : ginger garlic paste
1/2 tsp. : chili powder
A pinch of china salt
Salt : to taste
A pinch of red coloring (optional)
Oil for frying
2 green chilies : chopped
1 onion : chopped
Mustard and cumin seeds
curry leaves for seasoning

Directions:

Soak the cauliflower pieces in salt water for 10 minutes and cook in boiling water for 5 minutes. Remove and allow them to cool. Mix Bengal gram flour, maida flour, salt, ginger garlic paste, chili powder, china salt and make a fine batter by using water. Also add red coloring if required. Immerse the cauliflower pieces in the batter and deep fry in hot oil until they are golden brown. Heat 2 tbsp. of oil in another pan. Season with mustard seeds, cumin seeds, curry leaves. Also add chopped green chilies, onions and fry for a minute. Now add the fried cauliflower pieces to the seasoning mixture and mix well. Serve hot.

Cashew (Kaju) Rice

Ingredients:

Rice 2 cups
Cashewnuts, roasted and powdered 3 tbsps.
Salt to taste
Dry grated coconut 2 tbsps.
pinch of turmeric powder
pinch of asafoetida
Mustard seeds 1/4 tsp.
2 red chillies
Oil 2 tbsps.
few corriander leaves

Directions:

Heat oil. Add mustard seeds, red chillies and asafoetida. Next add the cooked rice and the remaining ingredients. Mix well. Sprinkle chopped corriander leaves. Serve with curd.

Baingan(Brinjal) With Spicy Gravy

Ingredients:

200g baby eggplants.
2 onions, chopped.
3 green chilies, chopped.
Few pepper corns.
5g tamarind, soaked in hot water.
1 tsp. mustard seeds.
1 tsp. cumin seeds.
2 tsp. cumin-fenugreek powder.
1 tsp. turmeric.
3 tbsp. oil.
Salt to taste.

Directions:

Cut the eggplants into four, lengthwise, to three-fourths of their total length and soak in salted water. Heat oil in a pan, season with mustard and cumin seeds. Add chopped green chilies, onions and pepper corns. Fry for few minutes. Then add eggplants and fry for another 2 minutes. Now add tamarind water, salt, cumin-fenugreek powder and cook until the gravy thickens. Serve hot with vegetable pulao.

Bikaneri Chana Dal Parantha

Ingredients:

Maida : 500 gms
Salt & Red chilly powder : to taste
Oil : 200 gms
Dhaniya powder : ½ tsp.
Chana dal : 250 gms
Garam masala : ½ tsp.

Directions:

Add salt and 2 tbsp oil to maida. Add water and make a soft dough. Soak chana dal for 6 hours. Boil it in a pressure cooker with a glassful of water. Wait for 1 whistle. Turn off the gas. Drain away the water and grind the dal. Heat 2 tbsp oil in a kadahi. Add dal paste and roast it for 3-4 minutes. Add all the masala powder. When it cools down stuff this paste into maida balls. The paranthas should be as thin as a papad. Make soft paranthas an hour before serving. Serve with Aloo Dum Masala, Raita and Chutney.

Aloo Curry (Potato Curry)

Ingredients:

1/2 kg potatoes,boiled, peeled and cut into small pieces
2 onions
chopped 4 green chilies
chopped 2 tomatoes
chopped 3 tbsp. oil Mustard and cumin seeds for seasoning
1 tsp. coriander powder
1 sprig curry leaves
Salt to taste
Coriander leaves for garnishing

Directions:

Heat oil in a pan, season with mustard and cumin seeds, curry leaves and fry for few minutes. Add green chilies, onions and fry for another 5 minutes. Now add tomatoes and cook until they become soft. Then add potato pieces and stir well. Add 1/2cup water and salt to taste and cook until the water evaporates. Finally, add coriander powder and remove from heat. Sprinkle coriander leaves and serve with any tiffin or rice.

Aloo Ka Bharta

Ingredients:

Boiled Potatoes (Big) : 4-5
Onion (finely chopped) : 2
Green Chilies (chopped): 2
Coriander Leaves (chopped): A few
Mustard Oil: 1 tsp
Salt : 1/2 tsp
Red Chilly Powder: 1/2 tsp
Jeera (roasted and powdered): 1/2 tsp

Directions:

Peel the potatoes and mash them coarsely. Add all the other ingredients and mix well.

The Indian Dal

Ingredients:

1/2 cup toor dal
1/2 cup moong dal
1 onion, chopped
1 tomato, chopped
2 green chillies, chopped
1/2 ” piece of ginger
2-3 cloves garlic, chopped
1/2 cup carrots, chopped
salt to taste
1/4 tsp. turmeric powder
1 cup spinach, chopped
1/4 cup greenpeas
1/2 tsp. mustard seeds
1/2 tsp. cumin seeds
A pinch of asafoetida

Directions:

Boil both the dals with turmeric in a pressure cooker. Separately boil the greenpeas and carrots for a few minutes till they are cooked. In a non-stick pan, saute the mustard seeds, cumin seeds and asafoetida.
Add in the onions, garlic, ginger and green chillies. Fry well. Add tomatoes. Fry for a minute or two. Next, add in the dals, spinach, greenpeas and carrots. Add some water if the mixture is too thick.
Then add salt to taste. Cook for 4-5 minutes or till the spinach is soft and cooked. This dish can also be made without spinach, in which case, garnishing can be done with chopped corriander leaves.

Creamy Trout Mousse

2 Trouts (6 oz ea. cleaned) *

1 Whole egg

1 Egg white

1/4 pt Olive or sunflower oil

5 tb Creamy yoghurt

1 ts Dijon mustard

1 1/4 ts Gelatine powder (or more)

Fresh parsley & tarragon 1/2 Cucumber

Caster sugar Tarragon vinegar *Note: In lieu of fresh trout, 1/2 lb cooked and flaked fish may be used. Serves 6 as an appetizer, or 3 as a light lunch. If using fresh trout, poach them in the oven at 350 F (180 C) gas mark 4 for 30 minutes, then cool, skin, bone and flake – there should be about 8 ounces of cooked flesh. Separate the egg and use the yolk to make mayonnaise: season it with salt and pepper, gradually beat in the oil, then 1 teaspoon or so of vinegar to thin and flavour the sauce. Put the prepared fish into a food processor. Add the mustard, yoghurt and 1 heaped teaspoon each fresh chopped tarragon and parsley, and whizz to a

perfectly smooth puree. Soak the gelatine (more may be necessary in hot weather) in 3 tablespoons cold water, let it soften and swell, then dissolve over low heat. Cool for a minute or two before adding the liquid gelatine to the fish puree: pour it on in a thin stream while the machine is running. Carefully and gradually beat the fish puree into the mayonnaise. Quickly whisk the egg whites to snowy peaks and fold them into the fish puree. Taste and adjust the seasoning. Divide the mixture between 6 ramekins or 3 small souffle dishes. Cover and chill for 2-3 hours until set to a soft cream. Seed the cucumber but do not peel. Chop it finely, sprinkle it with 1/4 teaspoon each salt and caster sugar and 1/2 teaspoon tarragon vinegar, and set aside for a couple of hours to draw out some of the cucumber juices. Drain and pat dry. Top each mousse immediately before serving with a small spoonful of the cucumber – a good crunchy contrast to the soft textured mousse – and garnish with a tarragon leaf. Creamy Smoked Salmon and Dill Tart

5 Sheet phyllo – thawed

3 tb Unsalted butter – melted

4 lg Egg yolks

1 tb Dijon mustard – PLUS 1

-teaspoon 3 lg Eggs

1 c Half and half

1 c Whipping cream

6 oz Smoked salmon – chopped

4 Green onions – chopped

1/4 c Dill – fresh, chopped OR 1

-T. dried dillweed Dill sprigs Calories per serving: Number of Servings: 6 Fat grams per serving: Approx. Cook Time: Cholesterol per serving: Marks: *DIRECTIONS* Generously butter 9-1/2-inch diameter deep-dish pie plate. Place 1 phyllo sheet on work surface (cover remaining pieces with plastic wrap, then with clean damp towel). Brush phyllo sheet with butter and fold in half lengthwise. Brush folded surface with butter. Cut in half crosswise. Place 1 phyllo rectangle, buttered side down, in prepared pie plate, covering bottom and letting pastry overhang 1 section of edge by 1/2-inch. Brush top of phyllo in pie plate with butter. Place second phyllo rectangle in pie plate, covering bottom and letting pastry overhang another section of edge by 1/2-inch; brush with butter. Repeat process with remaining 4 phyllo sheets, making certain entire surface of edge is covered to form crust. Fold overhang under to form crust edge flush with edge of pie plate. Brush crust edges with butter. (Can be prepared 4 hours ahead. Cover and refrigerate.) Preheat oven to 350F. Whisk yolks and mustard in medium bowl to blend. Beat in eggs, half and half, cream, salmon, onions and chopped dill. Season to taste with salt and pepper. Pour into prepared crust. Bake until center is set, about 50 minutes. Transfer to rack. Cool. Garnish with dill sprigs and serve slightly warm or at room temperature. NOTE: Purchased phyllo pastry is used here instead of a regular pie crust for quick and easy assembly. Creamy Seafood Pasta Salad

Ingredients
12 ounces shell pasta, medium
1 pound mixed seafood, (scallops, squid Shrimp, and/or firm white fish fillets) cut into 2 inch pieces
1 1/2 cup red bell peppers, sweet diced
1 cup green bell peppers, sweet diced
3/4 cup red onions, diced
3/4 cup carrots, thinkly sliced
1/2 cup green onions, chopped
—DRESSING—
1 cup yogurt, 2%
1/3 cup mayonnaise, light
1/2 cup fresh dill, chopped or 1 1/2 tablespoons dried dillweed
2 tablespoons lemon juice
2 teaspoons garlic, crushed
1 teaspoon dijon mustard
Directions:
1. Cook pasta in boiling water according to package instructions or until firm to the bite. Rinse with cold water. Drain and place in serving bowl.

2. In medium nonstick skillet sprayed with vegetable spray, saute seafood just untill cooked, approximately 3 minutes. Set aside.

3. Add red and green peppers, onions, carrots and green onions to pasta. Add seafood.

4. Make the dressing: In small bowl combine yogurt, mayonnaise, dill, lemon juice, garlic and mustard. Pour over pasta. Toss and chill.

TIPS: firm fish filets can be used with or instead of mxed seafood. Be careful not to over cook.

Grilled fish instead of sauteed makes an excellent variation.

Make ahead: Pasta salad and dressing can be prepared early in day. Do not toss untill ready to serve.
