Caramel Corn

  • ½ tsp Salt
  • ½ Cup Margarine
  • 15 Cups Popcorns
  • 1 Cup Brown sugar
  • ½ sp Baking powder
  • ¼ Cup light Corn syrup
Method:
  1. Preheat oven to 200 degrees.
  2. Divide popcorns between two ungreased baking dishes.
  3. Heat brown sugar, margarine, corn syrup and salt until it simmers; stir constantly.
  4. Remove from the heat and add baking powder.
  5. Pour mixture over the popcorns, stir until coated well. Bake for 1 hour, stirring every 15 minutes.
  6. Note: For a nutty version, decrease the popped corn to 12 cups and add 1-½ cups walnuts or pecans, or almonds to each pan.

Kid’s Banana Nut Bread

INGREDIENTS:

2 1/2 c. flour
1 c. sugar
3 1/2 tsp. baking powder
1 tsp. salt
3 tbsp. oil
3/4 c. milk
1 egg
1 c. chopped nuts
1 c. mashed ripe bananas

DIRECTIONS:

Grease and flour a 13×9 inch loaf pan.
Mix ingredients together and mix with a hand mixer for about 1 minutes. Bake for 55 minutes at 350 degrees.

Pasta Salad - Easy

INGREDIENTS:

1 lb. corkscrew pasta
8 oz. Italian salad dressing

DIRECTIONS:-

Cook pasta to al dente stage and drain. Pour dressing over warm pasta. Cover and refrigerate overnight.
Chop: 1 green pepper 1 purple onion 1/2 c. celery 2 tomatoes

Mix vegetables with marinated pasta and add McCormick’s Salad Supreme Spice to taste. Stir thoroughly and enjoy.

Gentle Lentil Soup

INGREDIENTS:

2 1/2 c Lentils, rinsed and drained
7 c Water or stock
2 md Onions, chopped
3 Cloves garlic, minced
Juice of one lemon
Salt and pepper to taste
2 Stalks celery, chopped
2 tb Olive oil
1 Or 2 bunches spinach, chard, or collards, washed and chopped

DIRECTIONS:

Saute onions, garlic and celery in the olive oil, 5-10 min.

Add lentils, and water or stock and simmer until lentils are very soft. If necessary, add more water to get soup to desired consistency.

Add greens, salt and pepper. Simmer for 10 more minutes or until greens are tender.

4. Stir in lemon juice right before serving.

Serves 16 preschool or 12 school-age children.

Kids-Cook: Banana Nut Muffins

INGREDIENTS:

3 Bananas, medium-large

1 c Low-fat plain yogurt

1/2 c Packed brown sugar

1/4 c Vegetable oil

1 2/3 c All-purpose flour

2 ts Baking soda

1/2 c Walnuts, chopped

DIRECTIONS:

Raisins may be used in lieu of nuts. In large bowl, use fork to mash bananas. Measure to make sure you have 1 cup. Add yogurt, sugar and oil; combine with fork. In separate bowl, stir together flour and baking soda; add flour mixture and walnuts to banana mixture and stir just until blended. (Batter may be lumpy.) Spoon batter into greased muffin cups; bake in 400F 200C oven for 15-18 minutes or until golden brown. Let cool in pan on rack for 5 minutes. Remove from pan; let cool completely.

Chocolate-Vanilla Shake

Ingredients

  • 1 cup Ice Cream
  • 70 ml Milk
  • 6 tablespoons chocolate powder
  • 100.0 gram Swiss Almond Chocolate
  • Sugar to taste

Directions Put all ingredients into a blender. Add sugar according to taste. Mix until it becomes a slow moving liquid.

Chocolate-Covered Strawberry Shake

Ingredients

  • 1 cup milk
  • 1 cup frozen strawberries
  • 1 packet Rich Milk Chocolate No Sugar Added NESTLÉ® CARNATION® INSTANT BREAKFAST Nutritional Energy Drink

Directions Place milk, strawberries and Carnation Instant Breakfast in blender; cover. Blend until smooth.
Makes 1 serving.

Chocolate Peanut Shake

Ingredients

  • 1 ripe medium banana, cut up
  • 1 cup chocolate fat free skim milk
  • 1/4 cup creamy peanut butter
  • 1 cup chocolate or vanilla low-fat ice cream

Directions In a blender container combine banana, chocolate fat free skim milk, and peanut butter. Cover and blend until smooth. Add low-fat ice cream. Cover and blend until smooth.
Pour into tall glasses; serve immediately.
Makes 2 (10-ounce) servings.

Directions add the two together using as much of the ingredients as you want.

Homemade Snack Mix

INGREDIENTS:

4 cups air-popped popcorn, tossed while hot with
2 tablespoons melted butter
1 1/2 cups chex cereal
1/2 cup roasted peanuts
1/2 cup dried fruit (raisins, cherries, cranberries or a mix)

DIRECTIONS:

Toss ingredients well and divide into 5 or 6 plastic bags for the lunch box.
